Preheat the oven to 400 degrees. Mix all dry ingredients, taking care to break up any brown sugar lumps. Make a well and pour all the buttermilk in at once. Mix with a spoon until just moist. Turn onto floured surface and knead until the dough comes together. Divide in half, shape into rounds and place on non-stick baking sheets. Sprinkle a little flour on the tops, and with a sharp knife, make a cross on the top of each loaf. Let the loaves sit for 10 minutes, then bake for 45 minutes.
This can be prepared ahead of time

Spice Mixture

Nutmeg1/2 tea4 1/2 tea

Mix parmesan, bread crumbs and eggs to form a soft paste. Bring stock to a boil and add the egg mixture all at once. Stir vigorously with a wire whisk and bring back to a simmer, stirring constantly until the liquid separates. As the eggs cook they will change the soup's appearance from creamy to slightly granular. Remove from heat once granular.
Serve by the quart with the spice mixture sprinkled on it just before service.

* Boil the chicken breasts (skin on) in enough water to to make broth for recipe.

Dough

Combine all ingredients in a bowl, then turn out onto a floured surface. Keep unworked portion covered with a damp cloth. Take slices of dough and run through pasta machine on lasagna setting until nearly see through.

Filling

Boil Country Ham in water to cover for 1 hour to render salt. In separate pot boil chicken breasts per note above. Cool meats and chop finely. Set broth aside until time to cook pasta. Mince mint and parsley together. Mix all ingredients together. Drop teaspoonfuls onto pasta, fold pasta sheet over to cover filling and press to seal (use a bit of water if necessary to ensure seal).

Soup

To prepare soup, bring chicken broth to a boil, add ravioli and cook 7 to 10 minutes, covered. Serve 24 ravioli in 6 cups broth per table. Sprinkle generously with Spice mixture (which has been combined) and Parmesan Cheese. Stock, Sweet spice mixture, Ravioli premade, assembly only on site.

Leek Almond Soup

Almonds, Toasted Chopped1/2 Cup9 Cups

Wash and chop the leeks, separate the whites and greens. Fry Bacon, crumble and set aside. Bring beef stock to a simmer. Saute leek bottoms in bacon fat and add to stock. Simmer for 30 minutes. Serve with garnish of bacon, almonds and leek tops.



Roasted Beef with Sapor de Uva


Roast Beef with Black Grape Sauce

Mix all of the sauce ingredients and marinate beef overnight. Roast in sauce until beef is tender. Hew beef into portions and serve in sauce.

Roast chicken in a roasting pan, lined with enough celery, onion and garlic to cover bottom of pan, until tender. Remember garlic is potent, don't overdo it.

Soak bread in stock, then in food processor combine all ingredients into a thick smooth sauce. Serve in small bowls on side with the Roast Chicken.
Serve at room temperature or warmer

Dough

Combine flour and salt in a bowl. Make well and add ice water. Cut together until it clings. Wrap in plastic and refrigerate until needed.

Filling

Preheat oven to 425 degrees. Beat cheeses together with wooden spoon or spatula. Add ground meat and mix. Add eggs and beat thoroughly to blend. Add salt to taste. Roll out two thirds of pastry for bottom crust. Add filling and roll out remaining doughfor top crust. Pinch to seal tightly. Paint top with egg wash. Bake for one hour.

Serve in its own pan, cut into portions.

Turnips with Cheese

JPreheat oven to 400 degrees. Peel whole turnips and boil in salted water just until tender (about 30 minutes). Cut into sliced 1/8 inch thick. Butter shallow foil pans, layer turnips and cheese, season well with salt and pepper, dot with butter and sprinkle with parmesan cheese. Bake until brown on top (15 minutes).

Prepare pie crusts per directions. Saute onions in fat until tranlucent, add brandy. Mix eggsa and cream. Add to onions. Fill pies and sprinkle with nutmeg. Bake for 40 minutes.

Serve in its own pan...Pre-cut into 8 portions.

Pears in Greek Wine Syrup

Ginger (ground)1 tea18 tea

Simmer the pears, red wine, and blackberries togetheruntil well colored and tender. In a separate saucepan combine the muscat wine, sugar and ginger. Bring to a boil and reduce by half until syrupy. Add the cooked pears and raspberries to the syrup and cool.

Serve in bowls
